Step 1

There are three types of cottage cheese Easter: raw, boiled and custard. The first one is the easiest to prepare. You will need cottage cheese, butter, sugar, sour cream, dried fruits, nuts and candied fruits.

Rub two kilograms of cottage cheese through a fine sieve. Mash 150 g softened butter and the same amount of sugar. Gradually add 150 g of sour cream to them. Grind the resulting mixture until all the sugar crystals are dissolved.

Then add cottage cheese, candied fruits, dried fruits and nuts (you can do with one thing). Put the resulting mass in a pasochny and put it in a cold place for 12 hours.

Another dish, without which Easter is unthinkable - Easter cakes. Traditionally, they are prepared on Friday morning. But all the preparatory work needs to be done the day before.

Fry and chop nuts, soak candied peas and dried fruits in rum or cognac. This will give them an extra flavor. Prepare the cake molds in advance. To do this, coat them with oil from the inside, and put baking paper on the bottom.

Step 6

Dissolve 30 grams of compressed yeast in a little milk. Sift two cups of flour and mix them with one cup of warm milk. Then add yeast and mix thoroughly.

Step 7

Cover the dough with a towel and remove to a warm place. Wait until it doubles in size. Mash five yolks, 0.5 cups sugar and 150 grams of soft butter. Add them to the dough. Beat the remaining proteins until a dense mass is formed and gradually add them into the dough.

Step 8

Add selected nuts, dried fruits or candied fruits. Pour the dough into molds and bake until tender. Whisk 2 egg whites and 100 grams of sugar separately. Cover ready-made cakes with them. Decorate the top with multi-colored millet.

Step 9

Boil eggs in tinted water. You can choose from artificial or natural colors. Natural ones include onion peels, beets, saffron, chamomile flowers, spinach, and more. Add one tablespoon of vinegar to the water to make the paint smoother.
